When I was living in Costa Rica the mangos were so delicious, this recipe just popped into my head and it has remained with me all these years.
1 medium navel orange
1 cup fresh cranberries
1 ripe mango, peeled, seeded and chopped
1/4 red onion, chopped
1 teaspoon jalapeño pepper, minced
1/4 cup fresh lime juice
2 tablespoons sugar
1/4 cup walnuts, coarsely chopped
Remove the zest from the orange and set aside. Peel the orange and cut the orange pulp into chunks. Simmer the cranberries in water for about 10 minutes, or until they pop.
Pulse the orange chunks, cooked cranberries, mango, onion, jalapeño, lime juice and sugar in the food processor. Add the walnuts and pulse the mixture quickly – the consistency should be crunchy. Refrigerate and serve chilled with turkey or pork.
